Day 9. Macadamia Nut Crusted Chicken with Kale Chips

Madademia nut-crusted chicken tenders is a fast way to elevate chicken to a new level AND make a meal the kids love. Like almost everything I cook, the chicken is fried up in 2 tablespoons of oil (I used coconut oil) in my cast iron skillet after coating the chicken with chopped up whole, salted macadamia nuts, salt, and pepper. Buying pre-cut chicken tenders makes this meal prep even faster. The kale chips need to be started first because they take a little more time in the oven at 250 degrees after a sprinkling of olive oil and kosher salt.
