Day 21. Healthy Sloppy Joes
I have a habit of putting squash or any vegetable I have on hand into whatever I’m making. So for tonight’s dinner of sloppy joes, I packed finely diced zucchini, carrots, and celery into the mix. I followed the directions on the sloppy joe packet but added my cut up veggies after browning the beef. Any veggie will do – eggplant, summer squash, butternut squash, bell peppers, carrots, celery, onions – you can’t go wrong. Veggies taste amazing cooked in beef fat. So no need to drain it. I served this messy sandwich on a toasted bun with a side of homemade kale chips. I’m pretty sure I heard groaning with delight at the dinner table.
