Day 15: Coconut curried vegetables with chickpeas and brown rice
I use Trader Joe’s Amba Mango Sauce as the base for this quick dinner. I love this curry-like sauce because it is soy-free, dairy-free and has great flavor without being spicy. This dish is a great way to use up those leftover veggies in your fridge. For tonight’s dinner I added the leftover roasted cauliflower from last night’s meal and a can of drained chickpeas. All the other veggies were cooked in my cast iron pan first. Then the Amba Mango sauce was added along with the cauliflower and one cup of coconut milk to add some creaminess. Let it heat up and serve over rice.
