Day 14. Quinoa Beef Burgers & Roasted Cauliflower
It’s getting hairier in my house and we’re all about burgers, beer, and beards. Tonight’s dinner is homemade quinoa beef burgers covered in homemade bread and butter pickles with a side of roasted cauliflower.
There’s something about a man with a full beard, I feel like they should have a big burger in one hand and a beer in the other.
I started the burgers in the morning by cooking the quinoa and letting it cool in the fridge. Then at lunchtime, I assembled the burgers by mixing together one pound of beef, 1/4 cup cooked quinoa, 1/3 onion diced finely, and salt and pepper. Divide into four patties and put back into the fridge. Take them out of the fridge 15-20 minutes prior to cooking.
Roasted cauliflower is a quick and easy side dish. Coat the cut up cauliflower with olive oil and garlic salt and cook in a 400 degrees oven for 20-25 minutes until edges are a little brown and caramelized.
